ARCHIVED - 30th November to 1st December tuna cutting demonstration at Casa Bartolo in Águilas
Tuna cutting is a highly specialised skill
Over the weekend of 30th November and 1st December the restaurant Casa Bartolo in Águilas, which is at the foot of the Infanta Elena Auditorium, is holding the third annual edition of a gastronomic event dedicated to tuna, the star activity being the “ronqueo de Atún” which is the process of preparing the different cuts taken from a tuna fish.
These substantial fish are used in a variety of ways and preparing the cuts for sale is a skilled process, undertaken only by specialist “cutters”. The restaurant is hosting two sessions in which a tuna fish will be prepared, starting at 13:00 on each day.
Alongside the “ronqueo de atún”dishes will be offered with tuna as the star ingredient. Further details nearer the event.
